I've tried learning how to make character sheets, but after reading the documentation, it's still confusing as hell.

Yeah, building your dice pool as normal looks like the way to go. If you have a set that comes up often (Buddy, a Distinction, this power at d10 or something, a Specialty), you might put it under favored rolls. For a Watcher, building a pool as normal looks like what you have to do, at least until someone creates a character sheet and shares it.
